Jerusalem Artichoke (Sun Potato)

Native sun flower, also called the sunchoke
Has huge tubulars like potatoes, only with thinker skin.
Primary vegetable of Woodland Indians, was a staple in diets of North Americans.
It can be used just like a white potato, or chestnuts in a salad or stir fry. It has a nuttier “wild” taste to it.
It contains inulin a polysaccharide (sugar) that stimulates the pancreas to produce insulin.
Has 0 Starch, so diabetics can eat as much as they want.
It also is a good source of potassium.
Grows up to 16' tall and blooms in the fall. It makes a great back drop, and likes the sun.
Because it contains 0 starch and its ability to stimulate insulin production it is the perfect thing for anyone with diabetes. Along with lots of cabbage and cauliflower, a healthy enjoyable diet can be attained for a diabetic.
